Massachusetts
So many boutique oyster farms have sprung up on both sides of Cape Cod that it’s virtually impossible to keep track. (And that’s what this site is for.) Cape Cod Bay grows oysters that taste like lobster bisque, and it is becoming increasingly recognized as one of the premiere merroirs in the world. With lots and lots of sand, it’s also the best place in the Northeast for beach-grown oysters.
