Damariscotta

This tidal river in Maine is singled out from the rest of the state because so many oysters of such phenomenal quality are grown up and down its length. A tradition of bottom-planting took hold long ago on the Damariscotta, which results in slower growth, stronger shells, richer flavor, and more work for the growers, but it’s well worth it.
