Southeast
Until recently, the Southeast was known for wild beds of Eastern oysters that were harvested and dispatched locally only. They tend to come in clusters that are long, skinny, and best experienced as part of a traditional Oyster Roast. Now oyster farming is taking off in Virginia and the Carolinas, and more and more beautiful oysters are being produced. With huge swathes of pristine habitat, this region has unlimited potential.
