Emerald-shelled, slow-grown oysters farmed on some old leases in PEI’s Souris River, the same estuary where Johnny Flynn cultivates his legendary (and equally green) Colville Bays. Harvested wild as oyster seed, then bottom planted for 4-6 years on the red dirt of the Souris River to produce strong shells.
