Bouctouche Bay, New Brunswick   🌎 See Oyster Map

“Chebooktook” is the original Mi’kmaq name for Bouctouche Bay, meaning “great little harbor” (not coincidentally, the name of the seafood company that grows this oyster). It’s a prime spot, a beautiful bay on the Northumberland Straight that separates Prince Edward Island from the Canadian mainland, protected by “La Dune de Bouctouche,” a six-mile barrier beach still creeping southward. Inside that barrier, the water is calm enough for floating trays of oysters, with just enough action to agitate them and deepen the cups of the shells. Worth a visit.

These were one of our favorites during a recent busy oyster eating weekend in Charleston, SC. Had them at 167 Raw Bar on King Street.
