Kys oysters are produced in Carnac and Riantec on the southern coast of Brittany, a famous old oyster region. There are several categories of oysters, all grown using rack-and-bag. L’Etoile are the plumpest and most coddled, well worth seeking out. All the oysters get deep cups from the lively wave action over the racks.
