Kumamotos are the sweetest and fruitiest of oysters. These, from Swinomish Shellfish Company in Similk Bay, the far northern nook of Skagit Bay, balance the sweet cream with a structured undercurrent of salt. Two sizes available: regular (diminutive) Kumamoto, and Baby.
