Native European Flat oysters harvested from the wild along the west coast of Ireland and fattened at the Kelly family grounds in the shallows of an inlet off Galway Bay. These oysters take 4 to 5 years to reach maturity, and have an ivory-colored meat that is lighter than the umber Flats found in New England and the Maritimes.

    Of all the Flats, these are my favorites. The classic Flat metal/iodine notes are tamped down with much more clean North Atlantic brine, and none of that weird, lingering battery-terminal tingling here.
