Famous oyster from the largest oyster-producing region in the world. The oysters are finished in knee-deep claire (rectangular salt ponds) for a minimum of one month, during which they fatten and take on a sweeter, fruitier flavor from the water and phytoplankton in the ponds. Thousands of acres south of the city of Marenne have been converted into claires. These are the entry-level oysters of the claire trio. Going up the ladder, in terms of time spent grazing in the claires and expected fatness, are Speciales de Claire and Pousses en Claire.

  1. These can be found at pretty much every oyster bar in France. They are the standard go-to, and it’s a strong standard. The ones I’ve had have been a bit lean and green, more like an American oyster than their more pampered siblings in Marenne. Quality is remarkably consistent.

    Had these in Bayeux- wonderful. Had these confused with Japanese varieties I have tried before. Thanks for Oysterater, learned these delicious varieties were original outside of France. Like Kumomotos in flavor. She’ll size about 3 inch with deep cups.

    Really is hard to beat these. Many, I know, prefer Speciales, but I find their taste a little muddy. These fines de claires have such a precise and distinguished taste. And, if you’re here in France, you can get them just about anywhere or anytime you want. The Promised Land.
