The alabaster companion to Abigail Carroll’s verdant Nonesuch oysters, Abigail Pearls are raised in the same crisp waters of the Scarborough River estuary, but kept in off-bottom bags instead of finished on the bottom, which keeps their shells snowy and their flavor delicate and saline.

Good salinity and a finish that evokes a childhood memory of messing around in eelgrass and tidal muck, all good though! Lovely oysters.
