The Midwest can’t grow any oysters, but it sure can eat them. Chicago has been an oyster hub since the 1800s, when trains would roll through laden with wooden barrels of Bluepoints and Chesapeakes. The region also has no local allegiances, making it the best place to find a nice mix of East Coast and West Coast bivalves.
