Hama Hama’s summer oyster, raised in the always-cold waters of Port Townsend Bay, which opens onto the Strait of Juan da Fuca, which opens onto the Pacific. As you’d expect from that ocean exposure, these are about as briny a Washington State oyster as you’ll find.
