Lady’s Island

Lady’s Island

ACE Basin, South Carolina   🌎 See Oyster Map

Grown by Frank Roberts, South Carolina’s first oyster farmer, in the pristine saltmarshes of the ACE Basin, near the mouth of the Coosaw River. There in the Lowcountry, no freshwater or development mars the pure marine environment, making for a clean and extraordinarily salty oyster.

Had three dozen over the weekend and these never disappoint. Briny and perfect size for the experienced palette or for the young ones trying oysters for the first time.

I have sampled oysters all over the world. My absolute favorite for size and salinity are the wild oysters from Port Royal Sound. These Lady’s Islands are a good second. They are a good size with great salinity and a beautiful ocean flavor.

Single lady’s were like biting the ocean – briny, bright, clean. Nice firm flesh, slightly vegetal. Firm white shells. Great with summer cocktails, crisp whites, IPA.

  5. Rating 4

Grown in a salt marsh washed by pure Atlantic seawater, these are as salty as any oyster on the planet. Delicious, if thirst-inducing.
